1/2 cup unsalted butter, softened
1/3 cup white sugar
1/2 cup packed brown sugar
1/2 cup peanut butter
1/2 teaspoon vanilla extract
1 egg
1 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup rolled oats
1 cup semisweet chocolate chips

1) Preheat oven to 350 degrees F.  Lightly grease two cookie sheets.
2) In a medium bowl, cream together butter, sugar, and brown sugar until smooth.
3) Stir in peanut butter, vanilla, and egg until well blended.
4) In a separate small bowl, combine flour, baking soda, and salt.  Then stir into batter just until moistened.
5) Mix in the oats and then chocolate chips until evenly distributed.
6) Drop by tablespoonfuls onto prepared cookie sheets, leaving about an inch between.
7) Bake in preheated oven for 10 minutes, or until the edges of the cookies begin to brown.
8) Cook on cookie sheets for 5 minutes, then transfer to wire racks to cool completely.
